Rachel Atcheson currently serves as the executive director of Food Policy Pathways, a non-partisan, non-profit organization that empowers the next generation of policy leaders, shaping a skilled workforce to drive cost-effective, sustainable, and healthy food and agriculture policies. She previously served as Deputy Director of New York City’s Mayor’s Office of Food Policy focusing on plant-forward food policy in the city by contributing to the establishment of Meatless Mondays and Plant Powered Fridays in NYC public schools, the launch of the lifestyle medicine programs in NYC Health + Hospitals, and other public health and sustainability initiatives.
Joey Schnide is a third-year student at NYU School of Law. He has worked across legislative, regulatory, and public-interest settings. As a policy counsel extern in the office of New York Assemblymember Linda Rosenthal, he drafted legislation addressing digital redlining and supported implementation of New York’s ban on the retail sale of dogs and cats. He previously served as a summer law clerk at the Federal Trade Commission, where he worked on antitrust and consumer protection matters, and as grants associate at Coefficient Giving, a major funder of farmed animal welfare advocacy. He has also authored an amicus brief, with Professor David Siffert, on behalf of the Animal Legal Defense Fund and Farm Sanctuary in support of New York City’s defense of its foie gras ban.
