Mama J’s Insalata Caprese Veganella

Delight your friends and family with this simple, elegant appetizer.

Just four ingredients and no cooking:

  • 2 large tomatoes* Any tomato will do, but if you have not tasted heirloom, give yourself a treat. Or, try firm cherry tomatoes, which give this dish a nice crunch.
  • 1-2 packages of Follow Your Heart Vegan Gourmet Mozzarella Cheese Alternative–don’t roll your eyes; you’re gonna love this!
  • One bunch of fresh basil*
  • Extra virgin olive oil to drizzle

Preparation time: 10 minutes max (and it’s a Zen experience).

Wash your veges. Cut the vegan mozzarella into ¼ inch slices. Place each slice onto your most beautiful platter. Place a basil leaf on top of the Mozzarella and place a ¼ inch slice of tomato on top of that. Repeat this process until you have used up all of the ingredients. Drizzle with olive oil if that appeals to you.

Pop one in your mouth and close your eyes.
